Mix egg with water. Mix flour with salt and pepper. Roll chicken in eggs, then flour, pat on so it's coated. Heat oil in skillet until sizzling. Cook chicken 3 minutes on each side or until no longer pink. Keep in oven to keep warm while cooking the rest of the chicken. Toss with Frank's Red Hot Buffalo Sauce, as much as you like.
Mix mayo with 1 TBS Frank's Red Hot Buffalo Sauce.
Place lettuce in center of tortilla, top with chicken, tomatoes and cheese. Drizzle with may mixture; roll up.
